Simple Instant Pot Kitchari Recipe

I love to make savoury dishes that will last for a couple days, particularly as we settle into the back to school routine and into the cozy, fall season.
Every culture has their version of comfort food: Chicken soup, Congee, Shakshuka, Matze Ball Soup… and I’ve been wanting to make Kitchari (kitch - uh - ree) for a while. It’s an Ayurvedic dish that is easy to make, warming, good for digestion, and very versatile. Plus, it seems to get even better the next day. This recipe always calls for Basmati Rice as the base, but through my research, I have found that it’s just as delicious with other legumes and beans including: Mung Dal, Lentils, and Quinoa. (If you choose to add Quinoa, I suggest you cook it separately and add it in after the rice cooks in the Instant Pot.) My personal favourite is Mung Dal.
I enjoy Kitchari on its own and then pair it with a veggie wrap, or on the side with chili the next day. My nine year old daughter approves of it, too! Here is my version of this beautiful and fragrant traditional dish:
Kitchari Recipe
Ingredients:
1 cup of Mung Dal
2 cups of Basmati Rice
1 can of Coconut Milk
1 Litre of Organic Chicken Broth
¼ Cup of Sliced Ginger
1 tsp Tumeric
1 tsp Cumin
Instructions:
Soak the Mung Dal for 6 - 8 hours (I do this in the morning so it’s ready for the instant pot later that day)
Rinse the Basmati Rice
Add all ingredients to the Instant Pot and set to “Pressure Cook” for rice
And that’s it! This is a very versatile recipe that can be eaten as the ‘main event’ or served as a side. It is really easy on the digestive system and provides comfort on those blustery days.
